This week our chef, Lillian Elidah prepares a yummy and filling breakfast favourite with a Golden Goodness Soya twist… the healthy Spinach Omlette!
Cooks 2 portions.
- Cup of Golden Goodness Soya Pieces
- 100g fresh spinach (not cooked) or 50g cooked
- 1 onion finely chopped
- 4 eggs
- Salt and pepper to taste
- 3 tbsp oil
Step 1 : Wash your uncooked spinach and set aside for later use.
Step 2 : Heat up a medium pot, add the washed spinach and stir until it starts to wilt. You can remove any excess liquid from the spinach and set aside.
Step 3 : Heat up a medium pan with sun soya oil, add the whisked eggs until it covers the pan.
Step 4 : Add the spinach, soya pieces and onions on top of the egg mixture.
Step 5 : Season with salt and pepper to taste.
Step 6 : Using a spatula lift half of the omletter and fold the omlette half way.
Step 7 : Cook for 30 seconds and serve.
Step 8 : Season to taste and simmer the ragout for 30 minutes.
